Indian butter Chicken

3 tomatoes-boil and peel
1/2 Cup cashew nuts fried in 2 Tbsp butter
Blend the tomatoes with 1/2 cup water
Blend cashews in 1/4 cup water to make creamy (similar texture as mayo)
2 small onions chopped
handful of coriander leaves chopped
3 chicken breasts cubed
Fry onions in 6 Tbsp of butter and add:
1 1/2 tsp ginger garlic paste
1/2 tsp garam masala
2 tsp coriander powder
1/2 tsp chili powder
1/4 tsp tumeric
Add the coriander leaves to the fried onions. Mix well and add tomato juice. Add 1 cup water and chicken. Boil until chicken is cooked through. Add about 1 tsp. of salt. Mix well and add cashew paste.

Nabisco Nutter Butter

COOKIES
1/2 Cup Shortening
2/3 Cup sugar (castor Sugar)
1 egg
1/2 teaspoon salt
3 Tablespoons Peanut Butter
1/2 cup oats
1 Cup flour (maida)

FILLING
1/2 Cup Peanut Butter
3/4 Cup Powder Sugar (icing sugar)
1 Tablespoon Graham Cracker crumbs (fine) I had Baby make the Nabisco Graham Crackers and then used them for this and Cheese cake crust.

Preheat oven to 325 degrees F. or 165 C.

In a large bowl cream together the shortening and sugar with an electric mixer. Add the egg, salt and peanut butter and beat until well blended. Put the oats in a blender and blend on medium speed until they are almost as fine as flour. Add the oats and flour to the mixture and blend well. Pinch out small portions of dough and roll into 1 inch balls in the palm of your hand. Press these flat on ungreased cookie sheets so that they form 2-inch circles. If you are a stickler for a cookie that looks just like the original you can form the dough into flat peanut shapes. We just did circles. Bake for 8-10 minutes or until light brown around the edges. While the cookies bake, combine the filling ingredients in a small bowl. When the cookies are cool, usa a knife to spread a thin layer of filling on the flat side of the cookie and press another on top.
Makes 2 dozen cookies

Baby's Indian Beef Curry

I need to type up the ingredients for this, but in the mean time here is the video I made of Baby making it.

I have FINALLY written this recipe down.

2 tomatoes diced
1 tsp salt
2 onions
1 Cup Coriander leaves
1 1/2 tsp ginger/garlic paste
2 tsp black pepper seeds
1 1/2 tsp. cumin seeds
2 tsp coriander powder
1/2 tsp tumeric
4 cloves
1/2 stick of cinnimon
1/2 kg beef (1 lb roast)-cubed
1/4 C vegetable oil
1 C water

Grind the onion, coriander leaves, ginger/garlic paste, pepper seed, cumin, coriander powder, tumeric, cloves, and cinnimon stick into a paste. Heat oil in pressure cooker and add paste when hot. mix well 3-4 minutes. Add tomato and salt. cook 5-6 minutes with lid on, but not pressured. When tomatoes are mashed, stir in beef and water. put on pressure lid and cook until it releases 4-5 times.

Indian Chicken and Potatoes

We recorded Baby making this and I haven't written down the recipe yet, but you can watch it here.

I have FINALLY written down this recipe.

1/2 kg chicken breasts-cubed (3-4 depending on how big they are)
3 tomatoes-diced
2 onions-chopped
handful of coriander leaves
3-4 potatoes-cubed
1/2 teaspoon salt
1/2 teaspoon chili powder
2 1/2 teaspoons coriander powder
1/4 teaspoon tumeric
1/2 teaspoon Garam Masala (curry)
1 1/2 teaspoons Garlic/Ginger paste
    (If you can't get the mixed paste, use 1 teaspoon garlic paste and 1/2 teaspoon ginger paste)
1/4 cup vegetable oil
Brown the onion in the vegetable oil in a large pot. Add the Ginger/Garlic Paste. Mix well and add chili powder, coriander powder, tumeric, and garam masala. Add a small amount of water and mix well. Add coriander leaves and stir. Stir in tomatoes and  salt and cover to boil about 4-5 minutes. Once the tomatoes are boiled down add chicken and potatoes. Stir well and add 1 3/4 cup water. Let boil until chicken and potatoes are cooked through.

Krispie Kreme Doughnuts

Donuts
2 (1/4 ounce) packages yeast
1/4 cup water
1 1/2 cups lukewarm whole milk (scalded, then cooled)
1/2 cup sugar
1 teaspoon salt
2 eggs
1/3 cup shortening, melted
5 cups all-purpose flour
canola oil

Creamy Glaze
1/3 cup butter
2 cups powdered sugar
1 1/2 teaspoons vanilla
4-6 tablespoons hot water

Chocolate Frosting (optional)
1/3 cup butter
2 cups powdered sugar
1 1/2 teaspoons vanilla
4-6 tablespoons hot water
4 ounces milk chocolate chips or semi-sweet chocolate chips

Dissolve yeast in warm water in large bowl. Add milk, sugar, salt, eggs, shortening, and 2 cups flour. Beat on low for 30 seconds, scraping bowl constantly. Beat on medium speed for 2 minutes, scraping bowl occasionally. Stir in remaining flour until smooth. Cover and let rise until double, 50-60 minutes.

Turn dough onto floured surface; roll around lightly to coat with flour. Gently roll dough 1/2-inch thick with floured rolling pin. Cut with floured doughnut cutter. Cover and let rise until double, 30-40 minutes.

Heat vegetable oil in deep fryer or large, heavy pot to 350 degrees. Slide doughnuts into hot oil with wide spatula. Turn doughnuts with tongs as they rise to the surface. Fry until golden brown, about 1 minute on each side. Remove carefully from oil (do not prick surface); drain.

Dip the doughnuts into creamy glaze set on rack then when slightly cooled - if using chocolate frosting, spread chocolate frosting on top.

Creamy Glaze: Heat butter until melted. Remove from heat. Stir in powdered sugar and vanilla until smooth. Stir in water, 1 tablespoon at a time, until desired consistency.

Chocolate Frosting: Heat butter and chocolate over low heat until chocolate is melted. Remove from heat. Stir in powdered sugar and vanilla until smooth. Stir in water 1 tablespoon at a time, until desired consistency.

makes about 3 dozen donuts

Yummy Pretzel Jello

2 C. chopped pretzel sticks
1 cube butter
1/2 C. Sugar
1 (8 oz.) cream cheese
1 (8 oz.) Cool Whip
1 C. sugar
1 sm. can crushed pineapple
1 large package strawberry jello
2 C. hot water
2 C. Strawberries slices

Mix together pretzel, butter and sugar and put in 9X13 pan. Bake at 350 for 7 minutes, cool.  Beat cream cheese, cool whip, sugar, and pineapple. Spread over cooled crust.  Dissolve jello in hot water add fruit and cool-When it starts to thicken spread on top of cream mixture.  Cool and Serve!

Annie's Cheese Cake

1 pkg graham crackers (crushed)
1/2 C. Brown sugar
2 Tbsp melted butter

mix together and pat in pie dish.

1 8 oz cream cheese
1/3 C lemon juice
1 can sweetened condenced milk
1 tsp vanilla

Blend in blender and pour into crust. Refrigerate to set.

While in India I used a different crust because I didn't have brown sugar. I got this recipe from about.com
